Riso ai Semi di Sesamo
Ingredienti:
Riso Basmati, Ghee (burro chiarificato), semi di sesamo, noccioline o anacardi non salati (meglio), farina di cocco.
Procedura:
Lavare il riso in acqua fresca e sciacquare
In una pentola far sciogliere un’abbondante dose di ghee, aggiungere i semi di mostarda nera e lasciare ‘poppare’ fino quasi ad esaurimento, aggiungere i semi di sesamo e le noccioline (o anacardi) e lasciar tostare un po’, poi aggiungere il riso, l’acqua molto calda e il sale. A circa metà cottura aggiungere la farina di cocco.
Ceci al Cocco
Ingredienti:
Ceci, aglio, cipolla rossa, farina di cocco, semi di mostarda nera, peperoncino a piacere
Procedura:
Tagliare finemente aglio e cipolla.
In una padella far ‘poppare’ i semi di mostarda nera, quando hanno quasi finito aggiungere aglio, e dopo pochi istanti la cipolla e il peperoncino.
Aggiungere poi i ceci e far rosolare aggiungento farina di cocco e sale
Panchamrita
This recipe for preparing a very important and nutritious desert from bananas. This is usually called as Panchamrita in Sanskrit which means it has five major ingredients that are equivalent to the five nectars or ambrosia. Usually this is made during the special pujas or worships connected with Vedic rituals and in the end is shared with all the people present.
Ingredients:
6 good size ripe bananas
100 grams of jiggery or brownsugar
100 grams of honey liquid
200 grams of grated coconut
100grams of cashew nuts well cut into halves
100 grams of raisins preferably golden raisins
Procedure:
Slice the bananas in rounds and make the thickness of the slices to 2cms or 1/8th of an inch and put them in a bowl
Add sugar, honey, grated coconut, cashew nuts and raisins
Mix them well and cover the bowl with a lid and let it set for 30 minutes
It will be ready to serve as a prasad or a desert for 4 to 6 people
Verdure al Latte di Cocco
Ingredienti:
Fagiolini, patate, patate dolci (o americane), cavolfiore, carote, aglio e cipolla rossa, semi di cumino, curcuma
Preparazione:
In una pentola mettere olio bollente e semi di cumino, lasciare ‘profumare’ e poi aggiungere aglio e cipolla tritati finemente
Lasciar soffriggere
Aggiungere le patate, le patate dolci, un goccio di acqua, curcuma
Aggiungere poi le carote, il cavolfiore e ancora acqua
Farina di cocco ?
Preparare una tazza con curry (4 cucchiai circa), paprika (due cucchiai circa), sale abbondante e far sciogliere con acqua, aggiungere poi alle verdure.
In ultimo aggiungere latte di cocco (circa 800 gr.)

Vegetables with dhal
Ingredienti:
Aglio, cipolla, pomodori, patate, melanzane, zucca, fagiolini, curcuma, curry, semi di mostarda neri (black mustard seeds), dhal (cereale indiano, esiste giallo, arancione)
Preparazione:
Tagliare finemente aglio, cipolla
Tagliare a cubetti: pomodori, patate, melanzane, zucca, fagiolini
In una pentola capiente mettere acqua e , a freddo, aggiungere l’aglio, la cipolla, il pomodoro, e le patate e cominciare a scaldare.
Aggiungere successivamente il dhal, la melanzana, la zucca e i fagiolini
Aggiungere un cucchiaino abbondante di aldi (curcuma) e sale e farina di cocco.
In una tazza a parte mischiare il curry (3/4 cucchiai grossi) (SAMBA/MASALA) con un po’ di acqua e amalgamare, aggiungere poi alle verdure.
In una padella far ‘poppare’ i semi di mostarda nera in abbondante olio e versare sulle verdure quasi cotte
Lemon Rice
Ingredients:
half pound (250 grams) basmati rice
grated coconut (unsweetened) one cup (100 grams)
one red onion (small size)
optional green sweet peas one cup (200 grams)
one teaspoon full of black mustard seeds
half teaspoon full of turmeric powder
4 tea spoons full of olive oil or ghee salt to taste
two lemons (yellow ones)
half a cup of green coriander leaves (cilantro leaves)
one cup of pea nuts/cashew nuts (100 grams)
Procedure:
boil one litre of water in a clean pot
when the water is boiling add salt. rinse the rice in a separate pot and add the rinsed basmati rice to the boiling water
add grated onions and grated coconut to the rice
wait till the rice is almost cooked
it may be around 15 minutes
now add the sweet peas and stir well and allow the rice to cook well by closing the lid on the top with a slight opening for the steam to escape
in a small frying pan heat the olive oil (you can use more oil if you like to)
add black mustard seeds
when the mustard seeds starts popping with a little noise allow all the seeds to pop and then add the peanuts and turmeric powder and heat till the nuts turn brown
turn off the heat and add this mixture to the rice in the rice pot
squeeze the two lemons on top of the rice
add cilantro (green coriander leaves) chopped on to the rice and mix the rice well till all the rice turns yellow
allow it to sit for 5 minutes and serve with yogurt, pickles, potato chips etc., to your liking.
Insalata di Cetrioli
Ingredienti:
Cetrioli, dhal giallo, farina di cocco, semi di mostarda nera
Procedura:
Mettere a bagno il dhal circa 45 min prima della preparazione.
Tagliare finemente i cetrioli a quadratini, aggiungere il dhal e mischiare
Aggiungere sale, limone (abbondante), farina di cocco
Far ‘poppare’ i semi di mostarda nera e aggiungere.
